The properties of beef and meat of other ruminants are related, among others, to with the fatty acid profile of intramuscular fat. The n-3 and n-6 unsaturated fatty acids are essential components of the dog’s food as there is no way of synthesizing them in the body. Conjugated linoleic acid (CLA) is a polyunsaturated fatty acid with outstanding properties. CLA acid has a number of valuable dietary properties. It also positively influences the functioning of the immune system. Ruminant meat contains significantly more CLA than meat from monogastric animals. This is due to the fact that CLA is mainly produced in the processes of bacterial biohydrogenation of linoleic acid in the rumen (the most important of the forestomachs in ruminants).
